Job description

Position Summary:

The Cook is responsible for the preparation and serving of meals for the residents of Eskaton. He/She ensures high-quality food preparation, maintains cleanliness of the food service area, and indirectly supervises Cooks, Food Service Workers, and Dietary Aides.

Position Responsibilities include:
  1. Applies sanitation and safety techniques while working and supervising.
  2. Assumes responsibility for all kitchen activities in the absence of the Manager/Director.
  3. Assists in training food service personnel as directed.
  4. Assists in scheduling, cleaning, and maintaining kitchen facilities and equipment according to schedules and procedures. Checks and maintains temperature logs regularly.
  5. Prepares and cooks meals according to recipes, menus, food production methods, regulatory requirements, and therapeutic diet orders, ensuring palatability and quality.
  6. Practices portion control during preparation and service and supervises kitchen staff during meal service.
  7. Notes food substitutions on daily menus and communicates changes to the Manager or Manager on Duty.
  8. Assists in inventory management, ordering, rotation, and maintenance of foods in storage areas.
  9. Familiar with the food service disaster plan.
Qualifications

Education: High school diploma or GED.

Training and Experience: 2-4 years recent experience as a cook; restaurant background preferred.

Certifications: Serve Safe Certification preferred.

Job Knowledge:

Knowledge of safe food handling and preparation, waste reduction practices, attractive presentation, and food quality testing. Broad knowledge of breakfast, lunch, and dinner preparation, including scratch soups, sauces, gravies, starches, and vegetables.
