Job summary

Columbia Hospitality in Seattle is seeking a Lead Cook to join the Cedarbrook Lodge team at Copperleaf Restaurant and Copperleaf Bar & Terrace. You will lead a culinary team, ensure high-quality food, and mentor cooks to elevate brunch and plated service.

Qualifications

• 5+ years in the industry, at least two years in a lead role.
• Able to cook proteins to pre-determined temperatures.
• Experience directing a banquet up to 100 with a small team.
• State Food Handler’s License(s).

Responsibilities

• Utilize specification sheets to prepare daily preparation requirements and maintain par levels.
• Prepare new menu items under supervision.
• Ensure attractive, consistent presentations of food items, buffet and plated.
• Supervise line cooks to monitor quality, presentation and consistency.
• Handle guest requests in a timely manner.
• Set up, restock, maintain, and clean food prep areas.
• Ensure presentation standards for all hot and cold items.
• Read and interpret recipes.
• Conduct product inventories, ordering and receiving.
• Maintain grooming standards among team.
• Enforce sanitation and safe food handling standards.
• Manage opening and closing kitchen procedures.
