Job summary

Flying Food Group is seeking a Food Production Director in Inglewood, CA to oversee all production activities for hot and cold kitchen operations. You will manage a diverse team, ensure food safety and quality, and optimize labor and food costs to boost efficiency and profitability.

Reporting to the General Manager, you’ll collaborate with the Executive Chef and Production Manager to drive excellence. The role requires 8–10 years in food production, strong leadership, and the ability to navigate

Qualifications

• Bachelor’s degree in Culinary Arts, Hospitality Management, Operations Management, or related field.
• Minimum of 8–10 years in food production management, preferably in airline catering or large-scale food service.
• Strong knowledge of food safety standards (HACCP, FDA) and cost control techniques.
• Proven leadership with experience managing large teams and complex operations.
• Excellent communication and problem-solving skills, especially in unionized environments.

Responsibilities

• Oversee daily hot/cold kitchen operations to ensure timely, accurate meal delivery for international flights.
• Collaborate with Executive Chef and Production Manager to align production and assembly processes.
• Maintain HACCP and local health regulations compliance; conduct regular audits and corrective actions.
• Develop strategies to control food costs, manage inventory, and forecast needs to reduce waste.
• Lead, mentor, and develop the Executive Chef and Production Manager; promote a collaborative team culture.
• Analyze workflows to identify bottlenecks and implement lean production or automation improvements.
