Job summary

Responsibilities

  • Directs the purchase, storage, distribution and preparation of food and the maintenance of food service equipment and facilities.
  • Establishes work schedules, supervises, instructs and counsels employees per policy guidelines.
  • Enforces the standards of food production, quantity and quality of food prepared, sanitation and maintenance of the kitchen and any vehicles used to transport meals; makes frequent inspections to ensure that standards are maintained and deficiencies are addressed quickly.
  • Prepares and reviews food service records, HACCP forms and production records for completion and accuracy daily.
  • Teaches and demonstrates correct techniques of food preparation, food storage, and safety.
  • Makes personnel recommendations, submits equipment repair requests, completes requests for supply items for use in the food service department through the appropriate chain of command.
  • Develops training schedules and maintains employee files and training records.
  • Works in the presence of and guides the work of inmate workers to ensure compliance.
  • Implements activities to motivate and inspire employees.
  • Ensures all policies and procedures are followed within agency and state guidelines for dietary staff.
  • Performs other job- related duties as assigned by the food service administrator.

Job Purpose

Under general supervision, the Kitchen Manager is responsible for planning, organizing, directing and supervising all food services operations within the assigned facility to ensure the safe, secure, and efficient preparation and service of adequate meals in compliance with state regulations, polices, and security procedures. This position oversees staff training, scheduling to ensure adequate coverage, inmate worker supervision, inspecting equipment, inventory and budget control. Collaborates with direct leadership and supports and promotes great customer service.

Minimum And Additional Requirements

STATE MINIMUM REQUIREMENTS:

  • Related supervisory experience in food service.

Additional Requirements

  • Knowledge of the procurement, storage, preparation, distribution and serving of food products.
  • Knowledge of dietetic principles involved in planning and reviewing menus for nutritional adequacy, dietary balance and attractiveness of prepared food products.
  • Knowledge of principles and procedures of food service management.
  • Ability to teach food preparation and cooking.
  • Ability to plan, assign and supervise the work of food service personnel.
  • Ability to prepare and analyze for accuracy all food service reports.
  • Ability to communicate effectively both orally and written.
  • Microsoft Office proficient.
  • Must be willing to travel for work and training when necessary.

This Is Considered An Essential Position. This position performs job duties relating to the custody, control, transportation or recapture of youth within the jurisdiction of the Department of Juvenile Justice, and the employee may have direct and indirect contact with youth within the jurisdiction of the Department of Juvenile Justice. Training applicable to these duties will be provided. Must be able to stand for extended periods of time. Exposure to hazardous equipment, extreme heat and freezing temperatures. Must be flexible to work alternating weekends, holidays and rotating shifts if necessary. Must be able to bend and stoop. Must be able to lift up to 50 lbs. In-state travel for work and training is required.

Preferred Qualifications

AGENCY PREFERRED:

A high school diploma and three years of direct food service management experience in quantity and quality cooking. Must possess Manager's Serv Safe Certification or the ability to complete the test with at least a 70 (passing score) within 90 days of hire.
