We are seeking a dedicated Kitchen and Utilities Assistant to join our team at the Central Kitchen in SW Portland, with a focus on supporting the hotline operations. This role is vital to the preparation and portioning of hot food items, including modified menu options, for distribution.

The Kitchen and Utilities Assistant ensures all food meets quality, accuracy, and safety standards, adhering to established production protocols and food safety regulations.

Ideal candidates will have:

  • A minimum of two years of experience in food service
  • Proficiency in various cooking techniques and the use of commercial kitchen equipment
  • Strong interpersonal skills and the ability to work effectively in a collaborative team environment.

Principal Duties and Responsibilities(Essential Functions)

  • Prepare a wide variety of hot food items using standardized recipes, adhering to production schedules, portioning guidelines, and proper cooking techniques.
  • Ensure accuracy in following daily production charts for the preparation and distribution of food.
  • Maintain strict adherence to USDA standards, ensuring all food products meet required quality, quantity, and portioning specifications.
  • Collaborate with kitchen staff to identify and implement process improvements in food preparation, inventory, delivery, and ordering systems.
  • Actively participate in team planning efforts and communicate updates regarding kitchen operations and agency goals.
  • Maintain high cleaning and sanitation standards in compliance with food safety standards and operating procedures.
  • Perform daily clean-up of all kitchen equipment and work areas.
  • Cross-train and support other departments as needed to ensure smooth and efficient kitchen operations.
  • Assist as needed in the dishwasher area.
  • Complete additional duties as assigned to meet organizational needs.

Qualifications

  • Minimum two-year experience in food service, assembly, quantity, and quality cooking required
  • Proficiency with commercial kitchen equipment, such as ovens, tilt skillets, kettles, sealing machines, and can openers.
  • Familiarity with cooking techniques including braising, sautéing, roasting, etc.
  • Ability to interpret and follow production schedules and recipe specifications accurately.
  • Strong teamwork and interpersonal skills; able to foster a positive, collaborative work environment.
  • Good computer, general math, reading, and communication skills

Any satisfactory combination of experience, training, and/or education which ensures the ability to perform the work may substitute for the above qualifications.
