The Jr Sous Chef will assist in leading daily operations and production in the property’s culinary operations. The resort’s outlets include our poolside restaurant, Redfish Grill, and our casual dining/take out facility, Scoops & Slices. This position will also support other areas such as Food Trucks, The Clutch, Provisions, and Banquets/Catering as the resort reopens.

The Jr Sous Chef acts as the lead cook, assisting the Sous Chef/Executive Sous Chef/Executive Chef in monitoring kitchen activities, expediting orders, and ensuring quality and presentation.

ESSENTIAL FUNCTIONS & RESPONSIBILITIES
  • Train kitchen staff on policies and sanitation standards.
  • Design aesthetic plating presentations.
  • Ensure hygiene and food safety compliance.
  • Maintain kitchen inventory and budget.
  • Provide friendly, service-oriented guest and employee interactions.
  • Maintain high standards of personal appearance and grooming.
  • Ensure regular attendance per company standards.
  • Follow all company policies and safety regulations.
  • Supervise kitchen personnel to fulfill their roles.
  • Perform menu accuracy and taste checks.
  • Minimize spoilage, waste, and overproduction.
  • Manage kitchen inventories.
  • Support departmental objectives and goals.
  • Expedite during peak meal times with a hands-on approach.
  • Work within the food cost budget, adjusting requisitions and controlling waste.
  • Familiarize with company policies and hospitality terminology.
  • Ensure plating standards and records are maintained.
  • Review food sales daily for accuracy.
  • Perform other duties as assigned.
Position Requirements
  • 1+ year supervisory experience in food and beverage within a hotel or resort.
  • 2+ years in culinary or related fields preferred.
  • Experience with QSR and outdoor dining preferred.
  • Excellent communication skills; fluent in English.
  • High School Diploma or equivalent required; Culinary Arts degree preferred.
  • Proficient in POS, Inventory Management Systems, and Microsoft Office.
Compliance Requirements
  • Valid driver’s license; motor vehicle background check required.
  • Food Handlers Certification as per state regulations.
Working Conditions
  • Ability to work in a fast-paced, deadline-driven environment.
  • Stand/walk for prolonged periods.
  • Lift up to 50 pounds.
  • Work in hot/cold kitchen conditions and varying weather.
  • Flexible schedule, including weekends and holidays.
