Qualifications

• Must be over 18 years of age.
• Minimum of one year of food prep or related work preferred.
• Previous supervisory experience preferred.
• Interacting with inmates is a plus.
• Ability to motivate and supervise inmates and/or team members in a correctional environment.
• Must be able to obtain a food safety certification.
• Ability to work independently with limited supervision.
• Ability to exercise good judgment and tact.
• Must follow basic safety procedures and policies.
• Must qualify for and maintain correctional facility security clearance.

Responsibilities

• Adhere to and maintain production guidelines by reviewing production and temperature logs.
• Supervise inmates in food preparation and tray assembly.
• Ensure timely, efficient meal service and enforcement of Aramark guidelines.
• Participate in preparation and serving of meals.
• Print and distribute recipes.
• Direct inmates in use of Aramark recipes and train on procedures.
• Ensure proper portions and dietary requirements are fulfilled.
• Obtain daily population counts and review with staff.
• Adhere to security policies; keep storage areas locked.
• Return all kitchen tools to secure areas; secure all keys.
• Determine work procedures, schedules and sanitation timetables.
• Assist in inventory; receive and store food; requisition orders as needed.
• Contribute to 5 P's in meal prep and postproduction activities.
• Follow HACCP and Aramark food handling/storage procedures.
