Job summary

FMG - Food Management Group, Inc. seeks a hospital cook to prepare meals for patients, staff, and visitors under the supervision of the Food Services Director.

The role includes supervising the Food Service Department in the director's absence and coordinating with dietary staff to meet modified diet needs. Responsibilities include planning cooking schedules, preparing meals to spec, managing quantities and temps, and maintaining a clean, compliant kitchen.

Qualifications

• Must read and write, perform simple calculations, and follow written and oral instructions.
• Must know proper methods and cooking temperatures for meats and other foods.
• Must time the cooking of vegetables to preserve nutrition, flavor, and appearance.
• Two years of training or experience in large-scale institutional food prep.
• Training in food preparation, cooking, estimating quantities, requisitioning and storage, kitchen management, and sanitation and safety.

Responsibilities

• Review menus to determine quantities of meats, vegetables, soups, desserts.
• Plan cooking schedule with Director to ensure timely meal service.
• Prepare cooking and seasoning of items for each meal.
• Measure and mix ingredients using kitchen equipment to make sauces, soups, stews, casseroles, and desserts.
• Bake, roast, broil and steam meats, fish and other foods.
• Check temperatures and adjust heat/timers to ensure proper cooking.
• Place weekly food and supply orders as guided by the Director.
• Supervise and cooperate with others; assist on serving line.
• Maintain a clean, neat cooking area and observe dress codes.
• Respond to workload changes; stay productive and flexible.
