• Proven experience in sushi preparation — nigiri, maki, sashimi, and specialty rolls
• Strong knife skills and knowledge of fish butchery and handling
• Ability to move with speed and precision during peak happy hour rushes
• Clean, organized approach to station management and food safety
• Flexible availability including evenings, weekends, and holidays
• Pride in craft and a team-first attitude

Responsibilities

• Execute The Hamilton's renowned sushi menu with consistency and care
• Own your station through one of DC's busiest happy hour services
• Maintain proper fish handling, storage, and rotation standards
• Set up, break down, and keep a tight, organized workspace
• Partner with the kitchen team to deliver seamless, high-quality service
