Job summary

Armor Brewing Co. in Allen, TX is seeking an experienced Head Brewer to own production from grain to glass. You will manage mashing, fermentation, packaging, and recipe development while shaping the beer program.

Lead and mentor cellar or packaging staff, coordinate with operations and front-of-house, and ensure quality control, regulatory compliance, and timely production schedule.

Qualifications

• 5+ years of professional brewing experience, including at least 1 year in a lead or head brewer role.
• Solid foundation across multiple beer styles.
• Experience managing raw material ordering and vendor relationships.
• Familiarity with TTB reporting and COLA process.
• Comfortable working in a small, fast-moving team where hands-on work is required.
• Strong communication skills, interacting with Ops, GM, and guests.

Responsibilities

• Oversee full brewing operations from mashing to packaging.
• Source and order raw materials and manage vendor relationships.
• Develop and maintain recipes for core and seasonal beers.
• Maintain batch records and conduct quality checks (ABV, gravity, sensory).

Who we are

Armor Brewing Co. is a veteran-owned craft brewery in Allen, Texas, built around the idea that this is the good part — good beer, good people, good community. We’re part of Armor Brand, a growing multi-concept food and beverage company that includes two Armor Coffee Co. locations. We take the beer seriously without taking ourselves too seriously.

The role

We’re looking for an experienced Head Brewer to own production from raw materials to the glass. This isn’t a "come in and follow the manual" position. You’ll have real ownership over what goes in the tank, what goes on the menu, and how we continue to build this program.

You’ll report to the Director of Operations and work closely with the GM and front-of-house team.

What you’ll own

Production

• Full brewing operations: mashing, lautering, boiling, fermentation, conditioning, and packaging
• Raw material sourcing and ordering — grain, hops, yeast, adjuncts, CO2, chemicals, and packaging materials
• Recipe development and maintenance across our core and seasonal lineup
• Batch record keeping and quality control (ABV, gravity, sensory evaluation)
• Equipment maintenance, sanitation, and cellar cleanliness
• TTB Brewer's Report of Operations and TABC compliance

Creative

• Collaboration on can art design and coordination with print vendors through COLA approval

Team

• Oversight of any cellar or packaging staff
• Contribution to the weekly production schedule

What we’re looking for

• Familiarity with TTB reporting and COLA process
• Comfortable working within a small, fast-moving team where titles don’t excuse you from getting your hands dirty
• Strong communication skills — you’ll interact with the ops team, the GM, and occasionally guests
• Bonus: experience with can packaging, recipe software, or graphic design tools for menu work
