Job description

The Big Game Hunt Butcher is responsible for processing and preparing wild game animals brought in by hunters. This includes the skilled breakdown of large game animals such as elk, deer, bear, and other wild and domestic animals, into high-quality cuts of meat. The Big Game Hunt Butcher must ensure proper handling, storage, and processing of the meat, while adhering to safety, cleanliness, and health regulations. A successful candidate will have a strong knowledge of butchery techniques, an understanding of game anatomy, and attention to detail.

  • Properly package and label meat for storage and customer pick-up.
  • Ensure proper chilling, hanging, and storage of game animals prior to butchering.
  • Adhere to health and safety regulations for handling and storing raw meat, maintaining correct temperatures and sanitary conditions.
  • Monitor and ensure that all equipment used is sanitized and in good working order.
  • Inspect game carcasses for quality and freshness before processing.
  • Ensure that any spoilage or issues with the meat are identified and communicated to management.
  • Maintain a high standard of cleanliness and professionalism in all areas of the butchery.
  • Communicate with hunters and customers to understand their preferences and provide expert advice on meat cuts, cooking methods, and preparation.
  • Ensure customer satisfaction by meeting specific requests for custom cuts, sausages, and specialty preparations.
  • Assist with packaging and delivering the finished product to customers in a timely manner.
  • Safely operate butchery tools and equipment such as knives, saws, grinders, and vacuum sealers.
  • Maintain a clean and organized workspace, adhering to all safety protocols to prevent injury.
  • Regularly inspect and clean butchery equipment, reporting any maintenance needs to management.
  • Assist with tracking and managing inventory of game animals, cuts of meat and supplies such as packaging materials.
  • Help ensure accurate records of processed animals and customer orders.
