Job summary

Vintner's Table in Wyomissing, PA is seeking an Assistant Kitchen Manager to support the Kitchen Manager in all kitchen functions, including food purchasing, preparation, quality standards, sanitation, and guest satisfaction.

This role emphasizes team leadership, training, inventory and cost control, and the ability to work days, evenings, weekends, and holidays in a fast-paced, friendly environment with opportunities for growth within the growing brand.

Qualifications

• Minimum 5 years of varied kitchen experience including food preparation, line, broiler, sauté, pastry, and expediter roles.
• At least 2 years in a lead chef role.
• Strong communication with managers, kitchen, banquet and FOH staff and guests.
• Must work a minimum of 40 hours per week.
• Experience in managing a team and developing future leaders.
• Experience in facilitating and executing training of kitchen staff.
• Understanding of inventory, cost of goods, and overall financial control.
• Ability to work days, evenings, weekends, and holidays.

Responsibilities

• Ensure all foods are prepared and served according to restaurant recipes, portions, and standards; demonstrate culinary excellence in preparation and presentation.
• Assist Kitchen Manager in establishing portion sizes and creating standard recipe cards for items and specials.
• Control food cost and waste through proper purchasing, storage, recipes, and waste management.
• Monitor food holding and refrigeration temperatures and ensure sanitation compliance.
• Assist with forecasting food consumption for restaurant and banquet events; help with purchasing and scheduling.
• Develop and standardize presentation techniques and quality standards.
• Oversee training of kitchen staff and reinforce safety and sanitation practices.
