Job summary

Stein Eriksen Lodge in Park City, Utah seeks a Sous Chef to lead kitchen operations, develop recipes, manage inventory and uphold uncompromising quality standards in a luxury resort environment. You will oversee daily production, control costs, set menu direction, and ensure consistent execution with the chef and line staff while maintaining safety and cleanliness.

Experience with cost sheets and style sheets is a plus, and prior work in high-volume resort kitchens is desirable.

Qualifications

• Culinary graduate helpful.
• Strong communication and organizational skills.
• Utah Food Handler’s Permit or Sanitation Certificate.
• Set quality standards and maintain composure under pressure.

We are looking for a Sous Chef at Stein Eriksen Lodge, located in Park City, Utah. The role involves overseeing kitchen operations, recipe development, inventory management, and maintaining quality standards.

Essential Functions

• Actively participate in all levels of food production
• Order all necessary product for daily production
• Monitor quality, cleanliness and proper use.
• Oversee rotation of product and its utilization
• Clear concise communication with chef and line staff
• Develop recipes, cost sheets and style sheets for restaurant menus
• Set standards, company and department
• Perform duties of executive chef in his/her absence; i.e., attend meetings, scheduling, labor controls and decision making
• Required to stand and walk for extended period of time
• Must be able to lift, push and pull up to 50 pounds
