Description
About the Company

Chan & Chan USA LLC is a growing food manufacturer producing high-quality frozen dumplings, buns, sausages, and other specialty products for our own brands and for leading retail and foodservice customers. Our team works in a modern, clean facility where safety, food safety, and quality come first.

Position Summary

The FSQA Technician is the plant’s food safety and quality presence on the production floor. The role monitors critical control points and preventive controls during production, inspects materials and finished product, runs routine tests, and holds product that does not meet standards. Success is measured by complete and accurate monitoring records, on‑time in‑process checks, quick action on deviations, and clean USDA (FSIS), FDA, and customer audit results.

Essential Functions
  • Monitor and verify critical control points and preventive controls during production, including cook and chill temperatures, freezing, and metal detection, and record results accurately.
  • Inspect incoming raw materials and packaging and finished product for temperature, weight, appearance, labeling, lot codes, and dates.
  • Verify allergen changeovers and check that labels on the line match the product being run and the current FSQA‑approved version.
  • Perform routine testing, such as pH, moisture, and ATP swabs, and collect environmental monitoring and microbiological samples for outside labs.
  • Place product on hold when it does not meet standards, document holds and releases, and complete nonconformance reports.
  • Review completed production and quality records for completeness and accuracy before product is released.
  • Conduct GMP audits and plant walk‑throughs, document findings, and follow up on corrective actions with production.
  • Calibrate and verify thermometers, scales, and metal detectors on schedule.
  • Support customer complaint investigations, mock recalls, daily USDA (FSIS) inspection activities, FDA inspections, and customer audits.
  • Keep FSQA records organized and filed in both electronic and paper form.
Food Safety, Quality and Safety Responsibilities

The company operates under dual USDA (FSIS) and FDA jurisdiction.

  • Follow Good Manufacturing Practices (GMPs), hygiene, allergen, and foreign‑material controls, and complete all required food safety and safety training.
  • Verify GMP compliance, complete monitoring records accurately and on time, and place product on hold when a deviation occurs.
  • Stop the line or hold product whenever food safety or quality is at risk, and notify the FSQA Supervisor and production right away.
  • Never sign, pre‑fill, or back‑date a record for a check that was not performed.
  • Follow laboratory safety and chemical handling rules for reagents and sanitizers.
Supervisory Responsibilities
