Job summary

CSG Talent seeks a seasoned Product Development Manager for frozen and pre-proofed dough in a commercial bakery setting. You will lead from formulation through scale-up, collaborating with Operations, Quality, Supply Chain and Sales to deliver commercially viable products.

The role emphasizes laboratory-to-plant transfer, shelf-life expertise, and hands-on development of croissants, Danish and puff pastry products with a focus on shelf stability and allergen-control.

Qualifications

• Bachelor's degree in Food Science, Bakery Science, Cereal Science or a related discipline is required
• Approximately 5–10 years of relevant commercial experience in frozen dough manufacturing or closely related environment
• Experience taking frozen or pre-proofed dough from development through to commercial production
• Strong formulation experience across straight and laminated dough systems
• Knowledge of dough rheology, gluten development, yeast functionality and freezing/thawing

Responsibilities

• Take ownership of new frozen and pre-proofed dough development projects from concept to commercial launch
• Develop formulations across straight and laminated dough platforms (croissants, Danish, puff pastry, enriched/sweet doughs)
• Establish shelf-life protocols and storage conditions for products
• Own tech handover from lab to pilot and full-scale manufacturing and organize plant trials
• Collaborate with Operations, Quality, Engineering, Supply Chain and Sales to ensure viability
• Maintain complete documentation and ensure allergen-control and food-safety compliance
