As an important member of the Wicked Weed Brewing team, the food truck kitchen manager acts as kitchen leader and is responsible for accurately preparing dishes to order, prepping food, periodically, training new kitchen employees, ensuring follow-through on weekly schedules, performing opening and closing duties, recipe creation, inventory, data entry into inventory management program, maintaining cleanliness up to health score expectations, and a variety of other tasks typical of a restaurant kitchen.

Essential Duties and Responsibilities:

  • Acts as kitchen leader, promoting an atmosphere of cooperation and teamwork within the department and the company.
  • Maintains a professional and positive attitude at all times, provides solutions to problems as they arise, and promotes unity between FOH and BOH teams.
  • Acts as inside and outside expo on multi-station line.
  • Responsible for overseeing daily prep and reviewing product mix to adjust par levels accordingly.
  • Accurately prepares food products to order and according to recipe.
  • Processes payment for food truck orders
  • Portions food products to standard portion sizes and recipe specifications.
  • Ensures all food being prepared and sold meets our quality standards.
  • Trains and assists other cooks as needed and ensures that all kitchen employees are working efficiently.
  • Responsible for ensuring weekly schedules are followed and cutting labor as needed.
  • Closes and opens the kitchen properly and follows appropriate checklists.
  • Maintains a clean and sanitary work station.
  • Stocking, storing, and organizing all food and wares by health code standards. Trains other employees in responsible food safety practices.
  • Knows and complies with health code, established systems, policies, checklists, food standards, quality, consistency, and general safety standards at all times.
  • Rotation of food items and communication of expired items, low inventory, waste, and any other stock issues to kitchen management.
  • Works regularly scheduled shifts in the kitchen. Nights and weekends are required, both line and expo shifts are required. Labor Day and Memorial Day weekend availability is required.
  • Attends scheduled monthly safety and management meetings.
  • Develops initiatives that improve operational excellence.
  • Upholds all policies and procedures according to handbook and department.
  • Follows and promotes all safety principles of Wicked Weed Brewing.
  • Supervises the line in cooperation with other BOH management and ensures maximum efficiency at all times.
  • Works in cooperation with FOH management and staff to ensure an outstanding customer experience.
  • Facilitates Food Safety Audits, including but not limited to daily temperature logs and inventory tracking.
  • Additional duties may be assigned as necessary.

Education and/or Experience:

  • Minimum two years of restaurant Back of House experience is required.
  • Graduate of culinary program is preferred.
  • Catering experience is a plus.

Work Environment:

  • Rapid changing flow of business
  • That of a fast paced taproom dining area and full service food truck.
  • Late nights/Early mornings
  • The employee frequently must work in an environment with a moderate to high noise level and moderate to warm temperature levels.

Physical Demands:

  • Ability to be on your feet for long periods of time standing and/or walking. Walking surfaces may be wet and/or slippery.
  • Ability to frequently talk, hear, and smell.
  • Ability to lift and/or move up to 35 lbs. safely and with proper body mechanics and occasionally life and/or move up to 55 lbs.
  • Vision abilities required by this job include close vision, distance vision and the ability to adjust focus.
  • Ability to work effectively in a kitchen environment with fluctuations in temperature and conditions (heat, cold, humidity) for an extended period of time.
