General Description

This position will oversee inmate workers and staff in the preparation and processing of foods, and the maintenance, safety, and sanitation of the food service, and teach inmates job skills to help prepare them for re-entry into the community.

This position will oversee inmate workers and staff in the preparation and processing of foods, and the maintenance, safety, and sanitation of the food service, and teach inmates job skills to help prepare them for re-entry into the community.

ESSENTIAL FUNCTIONS: The listed functions are illustrative only and are not intended to describe every function that may be performed in the job level.
- Trains and supervises a staff of Food Service Specialists to assure large-scale food production on a given shift.
- Schedules food service staff, supervises, and directs the work of subordinate staff.
- Assures compliance with food safety and sanitation regulations.
- Assists with menu and recipe development; provides nutritious menus, diabetic diets, and other medical and religious diets as required.
- Analyzes recipes/menus to meet the USDA guidelines for nutrition.
- Develops and maintains institutional food service policies and procedures.
- Responsible for overall maintenance, security, sanitation, and cleanliness of the facility.
- Responsible for safety and sanitation training of workers under their supervision and documentation of this training.
- Responsible for timekeeping and refrigeration logs, and sanitation records, as well as production schedules.
Qualifications
PREFERENCES:
Preference will be given to those with at least two (2) years of supervisory experience, two (2) years of food service experience, as well as two (2) years in a correctional facility
Knowledge
- Knowledge of supervisory methods.
- Knowledge of budget and procurement practices and policies.
Education
MINIMUM QUALIFICATIONS:
Bachelor's Degree (typically in Culinary Arts)
Experience
0-2 years of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services Specialist
OR
Education & Experience Substitution
3-5 years of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services Specialist

- Applicants must have the physical ability to lift 50 lbs.
- Applicants must be able to remain on their feet for long periods of time.
