Position Summary

The Food & Beverage Manager is responsible for overseeing the execution and service of all catered and concessions events with a primary focus on the Five Flags Civic Center. This role will also include duties/projects as assigned at the Grand River Center. The Food & Beverage Manager is responsible for assisting the Director of Food & Beverage with the efficient, professional, and profitable operation. The Food & Beverage Manager must be personable and able to work in an ever-changing, fast-paced environment. The Food & Beverage Manager will be responsible for training and developing all service staff.

The Food & Beverage Manager is responsible for ensuring quality food and beverage is served to the guests of the Grand River Center & Five Flags Civic Center. The Food & Beverage Manager is responsible for assisting in the training of all catering, concession, and support staff. The Food & Beverage Manager must maintain excellent attendance and be available to work a variable event-driven schedule including evenings and weekends. Open availability, professional presentation, outstanding interpersonal skills, and self-direction are required.

This role pays an annual salary of $45,000-$50,000.

About the Venue

The Five Flag Civic Center is a full-service meeting and event facility located in downtown Dubuque, Iowa. Newly renovated in 2020, it features over 80,000+ square feet of meeting and exhibition space for events up to 2,000. The arena has a capacity of 4,500 guests and can transform for various occasions, from concerts and sports tournaments to banquets and sessions. The theater is a National Historic Landmark seating 711 guests, and the Bijou Room is a black box theater with a capacity of 135 guests.

Responsibilities
  1. Manage Catering and Concessions Food and Beverage operations in collaboration with the Director of Food & Beverage, including interviewing, hiring, scheduling, ordering, inventory, labor costs, and equipment maintenance.
  2. Ensure the legal, efficient, professional, and profitable operation of the venue.
  3. Generate and review financial reports, including budgets, projections, forecasting, revenue analysis, disbursements, capital investments, labor and product costs, wages, and financial statements.
  4. Handle conflict resolution, last-resort mediation, arbitration, and labor negotiations when applicable.
  5. Oversee the serving of meals and beverages to guests, including alcohol, verifying guest IDs for minimum age requirements.
  6. Observe guests to respond to additional requests and determine when the meal has been completed.
  7. Execute directives stated in all Banquet Event Orders.
  8. Complete and update administrative paperwork related to events, such as diagrams, timelines, and side-work assignments.
  9. Ensure tableware and linens are replaced as necessary.
  10. Identify ingredients and explain menu item preparations.
  11. Assist in setting up banquet functions, including linens, dishware, glassware, and silverware.
  12. Maintain sanitation, health, and safety standards in work areas.
  13. Demonstrate excellent attendance and punctuality.
  14. Ensure equipment is operable and clean before events.
  15. Recognize guests who are visibly intoxicated and take appropriate action to cutoff alcohol.
  16. Lead F&B team with projects including training, inventory, and special events.
  17. Supervise concessions outlets as needed.
  18. Enforce all OVG policies and procedures.
  19. Practice strong HR skills, including employee relations, coaching, counseling, and completing HR paperwork.
  20. Program Point of Sale system with accurate menu items and pricing prior to events.
  21. Perform other duties as assigned.
Qualifications
  • 2-year degree in Business Management or Hospitality preferred; relevant work experience considered.
  • 3-5 years' management experience in a high-volume, fast-paced restaurant or catering environment.
  • Experience with Square / Clover Point of Sale systems.
  • Proficiency in Microsoft Office applications: Excel, Word, PowerPoint.
  • Ability to supervise others effectively.
  • Excellent communication skills in English, respectful and positive attitude.
  • Ability to work in a team-oriented, fast-paced, event-driven environment.
  • Valid food handling certificate or alcohol service permit if required by regulations.
  • Ability to handle cash accurately and responsibly.
  • Basic math skills related to POS transactions, cash reconciliation, and inventory.
  • Ability to cost out menus and create new menu items.
  • Flexibility to work nights, weekends, and long hours.
