About This Position

This position is located inside a jail/correctional facility.

The Floating Food Service Director plans, directs, and coordinates activities for a single-site food service operation in a facility with one kitchen and fewer than 1,000 inmates/beds. This role oversees operational and financial responsibilities for the kitchen, supervising an Assistant Food Service Director and/or a team of Food Service Supervisors and Cooks involved in food prep, serving, and cleanup in a secure correctional environment. Other duties may be assigned as needed.

Essential Functions/Core Responsibilities
  • Supervise, train, and instruct team members and/or inmates in food service practices, including preparation, cooking, and serving.
  • Ensure correct quantities of food are prepared and served according to the facility plan.
  • Hire, orient, train, and take corrective actions as needed.
  • Review and approve payroll bi-weekly.
  • Coordinate workflow and assign tasks to team members.
  • Ensure all team members are trained to perform their duties safely.
  • Enforce job-related rules, policies, procedures, and security guidelines.
  • Maintain accurate inventory and prepare menu schedules.
  • Complete ordering and reporting accurately and on time.
  • Comply with contractual obligations.
  • Store food items safely and hazard-free.
  • Plan for special events in collaboration with facility staff.
  • Maintain quality standards and sanitary environment per health codes.
  • Keep accurate reports of financial, production, and activity data.
  • Handle inspections and participate in contract negotiations if applicable.
  • Perform additional duties as assigned.
Qualifications
  • High School Diploma or Equivalent; at least 18 years old.
  • Five years of management or supervisory experience in food service.
  • ServSafe Certification.
  • Valid driver's license.
  • Knowledge of kitchen sanitation, safety standards, and basic accounting.
  • Preferred experience in institutional food service or restaurants.
  • Ability to travel up to 75%, including overnight stays.
