Job Summary

Under the direction of the Head Cook, the Prep Cook performs a variety of tasks including preparing, seasoning, and cooking food while conforming to food safety standards.

Essential Functions

1. Ensure compliance with Tribal, Federal, and other laws, gaming regulations, and Kickapoo Lucky Eagle policies.
2. Provide high-quality guest service by responding to guest and team member concerns.
3. Prepare, season, and cook food items using standardized recipes and methods under the guidance of the head cook.
4. Replenish prep line food items to ensure presentation and availability.
5. Adapt to changes in menu preparation and production methods.
6. Respond to guest preferences and concerns appropriately.
7. Maintain consistency in food appearance and taste, practice portion control, and minimize waste.
8. Ensure proper food storage and handle food according to sanitary regulations.
9. Label, date, and rotate food items in refrigeration; organize storage areas.
10. Maintain a sanitized and organized work station; care for kitchen equipment and utensils.
11. Clean workstations post-preparation; prepare fruits, vegetables, and cold meats as needed.
12. Operate kitchen equipment including stoves, fryers, microwaves, etc.
13. Report injuries and follow sanitation guidelines.
14. Assist in preparing food for special events and catering.
15. Conduct taste checks for quality assurance.
16. Promote KLECH core values and MAD skills.
17. Manage confidentiality of sensitive information.
18. Complete required training; monitor compliance with financial and anti-money laundering policies.
19. Perform other duties as assigned.

Minimum Requirements & Qualifications

• At least 6 months experience as a cook or prep cook.
• Ability to follow recipes and instructions.
• English communication skills preferred; additional languages a plus.

Work Environment

• Back of house, casino floor, and office settings.
• Frequent walking, standing, and exposure to smoke and noise.
• Irregular hours, including nights, weekends, and holidays.
• Potential exposure to lighting effects and dealing with difficult guests or staff.
• Travel may be required.

Conditions of Employment

• Must obtain and maintain a valid KTTT Gaming License and pass background checks.
• Legal authorization to work in the U.S.
• Minimum age 18 years.
• Reliable transportation.
• Compliance with policies, procedures, and gaming regulations.
