Position Overview
The Executive Sous Chef assists the Executive Chef in overseeing and directing all aspects of kitchen operations. This role ensures the highest standards of food quality, presentation, and sanitation in accordance with company standards and luxury brand expectations. The Executive Sous Chef helps lead the culinary team across multiple outlets including dining venues, banquets, and in-room dining services within a full-service hotel environment.
What You’ll Do
Culinary Leadership & Operations
- Assist the Executive Chef in managing day-to-day kitchen operations across all dining outlets, banquets, and in-room dining.
- Act as the kitchen leader in the absence of the Executive Chef.
- Ensure consistent execution of food quality, presentation, and taste standards.
- Foster a professional, collaborative, and team-oriented kitchen environment.
Team Leadership & Development
- Supervise, train, and mentor culinary staff including Sous Chefs, Line Cooks, and Stewards.
- Support scheduling, forecasting, and labor management systems.
- Model professionalism, leadership, and teamwork at all times.
Food Safety, Quality & Compliance
- Enforce strict adherence to food safety standards, sanitation protocols, and local health regulations, including HACCP compliance.
- Ensure kitchen operations meet luxury brand and company standards.
- Maintain a clean, safe, and organized kitchen environment.
Menu Development & Cost Control
- Contribute to menu planning, recipe development, and execution of special menus and events.
- Monitor and control food and labor costs to meet budgetary objectives.
- Coordinate with Purchasing on food ordering and inventory control to ensure freshness, quality, and consistency of ingredients.
What You’ll Bring
Required Education & Experience
- High School Diploma or equivalent required.
- Minimum of 5 years of progressive culinary experience required, including at least 2 years in a leadership role such as Sous Chef or Executive Sous Chef.
- Experience in an upscale hotel, resort, or multi-outlet restaurant environment required.
Preferred Education
- Formal culinary training or equivalent combination of education and experience preferred.
Required Skills and Abilities
- Strong leadership and staff development skills.
- In-depth knowledge of food preparation techniques, kitchen operations, and food safety standards.
- Excellent communication, organization, and problem-solving abilities.
- Ability to work a flexible schedule including nights, weekends, and holidays.
- Ability to perform in a fast-paced, high-volume luxury kitchen environment.
Licenses or Certificates
- ServSafe Manager Certification or equivalent required (or must be obtained upon hire).
