Job summary

Four Seasons Resort Hualālai seeks an Executive Sous Chef with a passion for excellence and proven leadership in hospitality operations. The incumbent will work across disciplines to deliver an exceptional dining experience and uphold the Four Seasons standards.

Responsibilities include coordinating staff development, planning menus, managing labor costs, and ensuring sanitation and quality control across the kitchen.

Qualifications

• 3–5 years in culinary/food & beverage, or 1–2 years in a supervisory role.
• College degree in hotel/restaurant management or culinary arts, or equivalent experience.
• Legal work authorization in United States.

• Coordinate selection, training, development, and evaluation of Kitchen Department staff and managers.
• Assist in menu planning and ensure high-quality food preparation and presentation.
• Control labor and operating expenses through scheduling, budgeting, and inventory control.

Executive Sous Chef

The Four Seasons Resort Hualalai is looking for an Executive Sous Chef. Candidates with a passion for excellence, expertise in hospitality operations and proven leadership experience are invited to apply for a career with Four Seasons. As a member of the Culinary team, the Executive Sous Chef works across disciplines to deliver an exceptional experience.

WHAT YOU’LL DO

• Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen Department through effective management and leadership to ensure that established cultural and core standards are met; long-range strategic operational planning.

• Assist in the planning and development of menus for the hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.

• Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.

• Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.

• Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.

• Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.

WHAT TO BRING

• Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card when working in food and beverage

• Three to five years previous experience in a culinary/food & beverage line position, or one to two years in a supervisory or assistant manager position.

• College degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience is required.

• Successful candidate must possess legal work authorization in United States
