Job description

Stella represents an expression of artistry across the mediums of cuisine, art and design.

Italian for ‘star’, Stella is inspired by the traditions of the traveling hearth of the coastal and pastoral communities of Southern, Central and Northern Italy, enriched with local California, seasonal ingredients.

A creative collaboration between restaurateur, Janet Zuccarini, and Executive Chef Rob Gentile, Stella brings modern twists on age-old Italian culinary traditions to West Hollywood.

The Role

Manage Daily Pastry Station Operations

  1. Ensure that all product is being prepared consistently to Stella standard.
  2. Maintain up-to-date recipes for all menu items, ensuring recipes are used at time of preparation.
  3. Oversee production equipment preventative and repair & maintenance.
  4. Follow and enforce all restaurant policies and procedures.
  5. Maintain pristine working conditions for production teams.

Controlling Profit and Loss

  1. Evaluate supplier pricing every 6 months alongside Executive Chef & General Manager.
  2. Maintain optimal labour percentages; oversee production scheduling, avoiding overtime, and break violations.
  3. Maintain optimal food cost targets as set in operating budgets.
  4. Ensure par ordering levels are maintained and all incoming stock is verified for accuracy.
  5. Oversee regular inventory reporting and address any variance.
  6. Meet established targets on COGS.

Hiring and Retaining Awesome Team Members

  1. Hiring and training top talent for all supporting pastry positions.
  2. Lead ongoing training & development of team members in all departments.
  3. Foster an environment for happy people making people happy.
  4. Developing Sous Chefs and cooks to become future leaders within the company.

Evaluates and Executes Changes to Pastry & Dessert Menu Development & Business Development

  1. Revise menu as needed, as approved by Executive Chef.
  2. Coordinate with Executive Chef & General Manager on any new menu item rollouts.

Maintain Safe Workplace

  1. Ensure production representation in Health, Safety & Security Meetings.
  2. Enforce safe food handling policies and procedures.
  3. Manage in compliance with workplace harassment and violence policy.
Who You Are

The right person for this role has a strong culinary leadership background and prioritizes both guest and team member experience. The ideal candidate is equal parts people and process-driven with an aptitude for creating efficiencies at all levels of the business.

Preference will be given to those who possess:

  1. Exceptional leadership and communication skills.
  2. Minimum five (5) years culinary management experience specific to pastry.
  3. Strategic, entrepreneurial and innovative thinker.
  4. Passionate, positive, and approachable.
