Description

The Executive Chef has total responsibility for the main kitchen, banquets, and culinary staff. The Executive Chef is responsible for leading by example and developing their staff. The Executive Chef directs food preparation, production, and control for Toscana, the AC Lounge, and banquet facilities at the hotel. They ensure that the kitchen provides fresh, appealing, and properly flavored foods while focusing on food costs.

As Executive Chef, you will be:

  • Responsible for the selection, training, and development of department personnel; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; ensuring safety; addressing complaints; resolving problems; and overseeing departmental matters related to employment and civil rights laws.
  • Review staffing levels to meet guest service, operational needs, and financial objectives.
  • Supervise and coordinate activities of cooks and food preparation workers.
  • Demonstrate new cooking techniques and equipment to staff.
  • Develop and enhance the food product presented to guests, proposing changes based on marketplace and guest needs, and using market research for new products and menu concepts.
  • Maintain quality and consistency of food delivery and standards.
  • Support team goals and measure effectiveness through food & beverage profit and service performance, aiming to exceed guest expectations. Participate in long-range planning.
  • Develop and implement guidelines and control procedures for purchasing and receiving.
  • Establish goals including performance, budget, and team objectives.
  • Communicate safety procedures, ensure understanding, monitor processes, and enforce safety codes.
  • Manage department expenses such as food costs, supplies, uniforms, and equipment.
  • Work with vendors to obtain quality offerings at reasonable prices.
  • Provide direction for menu development.
  • Improve service by understanding guest needs, providing guidance, feedback, and coaching.
  • Interact with guests for feedback on quality and service levels.
  • Empower employees to deliver excellent customer service, establishing clear expectations and providing ongoing training.
  • Control profit and loss elements, managing major kitchen and restaurant expenses, setting margins, and comparing performance against projections.

Requirements:

  • High school diploma or GED
  • 6 years of experience in culinary, food and beverage, or related fields
  • 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or related major; or 4 years’ experience in a related professional area
  • Must maintain a positive attitude at all times
