Job Summary

Job Summary:

Working as the Executive Chef, you will oversee kitchen operations while maintaining a safe and sanitary work environment for staff. You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines. This role is ideal for an energetic, entrepreneurial culinary professional.

Key Responsibilities:

  • Plan menus according to established guidelines, including regular and modified options
  • Follow standardized recipes, portioning, and presentation standards; complete daily production worksheets and waste logs; taste meals to ensure quality
  • Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation, based on company and regulatory standards
  • Establish and maintain cleaning and maintenance schedules for equipment and work areas, ensuring staff adherence
  • Maintain inventory of food and supplies within guidelines, ensuring necessary stock is available
  • Decide on utilization of leftover food within company policies
  • Comply with health and sanitation regulations, evidenced through audits
  • Follow safety policies and report incidents as required
  • Participate in departmental meetings, staff development, and professional programs

Preferred Qualifications:

  • A.S. degree or equivalent experience
  • 5+ years of progressive culinary/kitchen management experience, depending on formal education
  • Extensive catering experience is a plus
  • Experience in high-volume, complex foodservice operations is highly desirable
  • Institutional and batch cooking experience
  • Hands-on chef experience required
  • Knowledge of food and catering trends, quality, sanitation, food cost controls, and presentation
  • Proficiency with computers, including Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and internet
  • Willingness to participate in client satisfaction activities
  • ServSafe certification is highly desirable
