Summary of Position

Directly responsible for all kitchen functions including food purchasing, preparation, and maintenance of quality standards; sanitation and cleanliness; training of team members in methods of cooking, preparation, plate presentation, portion and cost control.

Responsibilities
  1. Ensure all food and products are prepared and served according to standards.
  2. Hire, evaluate, and discipline kitchen staff.
  3. Oversee training and orientation of new kitchen team members.
  4. Maintain equipment and oversee cleanliness and sanitation.
  5. Plan and price menu items, establish portion sizes, and prepare recipe cards.
  6. Manage inventory, ordering, and receiving of products.
  7. Control food costs and waste.
  8. Conduct performance appraisals and schedule labor efficiently.
  9. Ensure safety and sanitation standards are met, including training in first aid and handling hazardous materials.
Qualifications
  • Minimum of 5 years' leadership experience in a high-volume 5-star restaurant.
  • At least 6 months in a similar role.
  • Excellent communication skills.
  • Physical ability to lift up to 50 pounds and work long hours standing.
  • Availability to work 50-55 hours weekly.
  • Ability to work in a fast-paced, high-stress environment.
