Location: We are seeking an experienced Executive Chef for Illinois State University.

Principal Function:

The Executive Chef is responsible for maximizing the productivity of the culinary staff, managing sous chefs, training and supervising culinary personnel, and overseeing all culinary activities. This includes estimating food consumption, requisitioning or purchasing food, developing recipes, standardizing production recipes, establishing presentation and quality standards, planning and pricing menus, ensuring equipment operation and maintenance, and maintaining safety and sanitation standards. The Executive Chef may also oversee catering events and provide culinary instruction or demonstrations.

Essential Responsibilities:

  • Lead the Culinary Management Team to manage all aspects of Food Preparation, Product Handling, Equipment Utilization, and Food Safety.
  • Analyze Business Volume and Product Usage Daily.
  • Participate in the Development and Implementation of Business Strategies.
  • Contribute to achieving 100% customer satisfaction through personal commitment to customer service and leading the culinary team by example.

Qualifications/Skills:

  • Leadership experience in managing culinary teams and operations.
  • Strong knowledge of food preparation, safety standards, and kitchen management.
  • Excellent communication and organizational skills.

Preferred:

  • BA/BS in Business or Hospitality from an accredited college or university.
  • ACF Certified Executive Chef or Culinary Administrator.

Other Requirements:

  • Ability to work effectively and safely in challenging environments, including wet floors, temperature extremes, and noise.
  • Must be able to lift up to 50 pounds and maneuver in tight spaces.
  • Hours may include nights, weekends, and holidays.
