Job Summary

The Executive Chef III - Catering for Compass at the University of South Florida oversees catering kitchen operations, directing meal preparation in line with corporate programs and guidelines.

Key Responsibilities:
  1. Plans menus according to established guidelines, including regular and modified options.
  2. Trains kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation, adhering to company and regulatory standards.
  3. Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas.
  4. Maintains inventory of food and supplies within guidelines, ensuring necessary products are available.
  5. Ensures compliance with federal, state, and local health and sanitation regulations and department procedures.
  6. Performs other duties as assigned.
Qualifications:
  • Associate's degree or equivalent experience.
  • Three to five years of progressive culinary/kitchen management experience.
  • Knowledge of food and catering trends, focusing on quality, sanitation, food cost controls, and presentation.
  • Proficiency with computers, including Microsoft Office, Outlook, and internet use.
  • Extensive catering experience is a plus.
  • Experience with high-volume, complex foodservice operations is highly desirable.
  • ServSafe certification is highly desirable.
