  • Maintain grooming standards as per employee handbook.
  • Monitor food outlets to ensure standards are met (grooming, food quality, day dots, etc.).
  • Monitor operational impacts on COGS.

  • Maintain high standards of cleanliness, sanitation, and safety.
  • Log incidents, complaints, and compliments in detail.
  • Oversee hiring, staffing, and training of culinary and stewarding staff.
  • Assist in training culinary employees and develop training materials.
  • Develop and oversee policies and procedures for the Food & Beverage department.
  • Oversee menu design, recipe development, and food quality standards.
  • Develop budgets for culinary and stewarding activities.
  • Manage food receiving, storage, and inventory rotation.
  • Assist with product specifications and monitor sanitation standards.
  • Ensure consistency in food specifications and quality.
  • Hold culinary leadership accountable for food and labor costs.
  • Manage morale and performance of culinary and stewarding staff.
  • Maintain positive interdepartmental relations.
  • Manage 5–10 chefs and supervise up to 150 employees.
  • Lead the direction, coordination, and evaluation of kitchen staff.
  • Perform supervisory responsibilities including hiring, training, performance appraisals, and discipline.
  • Work various shifts, including weekends and holidays.
  • Other duties as assigned.

  • Bachelor’s degree preferred.
  • Six years of culinary management experience; ten years overall culinary experience.
  • Proficiency in Microsoft Office applications.
  • Extensive culinary knowledge across multiple cuisines, with strong leadership skills.
  • Experience in budget development, scheduling, and cost control.
  • Understanding of HR policies and procedures.
  • Ability to interpret safety and operational documentation.
  • Competence in report writing and effective communication.
  • Strong mathematical and recipe development skills.
  • Problem-solving ability in practical situations.
  • Ability to interpret various instructions and documentation.
  • Must qualify for Maine Gambling Control Board licensing.
  • Serv-Safe or equivalent certification required.
  • Physical mobility to perform job duties, including lifting up to 25 lbs. and working in varied environments.
