Job summary

Seneca Gaming Corporation in Buffalo, NY seeks a Senior Cook with expertise in a specialized style of cooking and the ability to entertain guests. The role supports Sous Chefs and advances kitchen operations within policy guidelines.

Responsibilities

  • Insure food items are properly stored, including raw materials and prepared items.
  • Inspect all outgoing orders are properly prepared, i.e. portion control, garnished correctly for presentation.
  • Insure all items are available for consumption by guest, i.e. soups, sauces and gravies are available prior to restaurant opening, as well as assembling supplies and equipment needed for daily cooking.
  • Take inventory of all meats and seafood.
  • Coordinate food orders to proper cooks.
  • Prepare all food items with strict adherence to food specifications set out in recipe manual.
  • Review production schedule to determine food requirements including variety and quantity of food preparation.
  • Complete production sheets and other records in conjunction with Sous Chefs as required.
  • Maintain clean work areas, utensils, and equipment.
  • Regulate temperatures of ovens, broilers and grills.
  • Maintain proper food temperatures in accordance with regulatory and/or ServSafe standards.
  • Properly label, date & rotate all products to ensure safe keeping and sanitation.
  • Must have command of all stations of the kitchen, i.e. roast, fry, pasta, vegetable, grill, pantry, breakfast, sauté and high volume quantity cooking.
  • Must have the ability to work with Sous and Room Chefs in conjunction with daily operations.
  • Incumbent will be responsible for teaching and mentoring Cooks and Production Cooks.
  • Ability to work in harmony with others under a strenuous environment.
  • Report to work well-groomed in full uniform and on time with badge on upper left side of uniform.
  • Provide prompt, friendly, and courteous service of food and beverage to all our guests.
  • Be hospitable, friendly, and polite with all guests, co-workers, and management using positive body language.
  • Maintain a current understanding of all policy and guidelines regarding information security including the Seneca Gaming Corporation Acceptable Use Policy. Understand and comply with all information security policies and procedures at all times.
  • Provide exceptional customer service to all patrons and communicate in a pleasant, friendly and professional manner at all times. Maintain a professional work environment with supervisors, managers and staff.
  • Meet the attendance guidelines of the job and adhere to regulatory, departmental and company policies.
  • Must complete all required SGC Training programs within nine (9) months from commencement of employment.
  • Attend all necessary meetings.
  • Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed. Hours are determined by a 24-hour schedule.

Job description

The Senior Cook should possess expertise in a specialized method or style of cooking. The ability to demonstrate entertainment value or produce specialty foods also qualifies. Assist Sous Chefs in all culinary functions. All duties are to be performed within the guidelines of the Seneca Gaming Corporation’s policies and procedures, Internal Control Standards and objectives.

Physical Requirements and Work Environment

The physical demands and work environment characteristics described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. When on the casino floor, the noise levels increase to loud. Must be able to work in an environment where smoking is permitted.

  • Must be able to stand, walk and move through all areas of the casino.
  • Maintain physical stamina and proper mental attitude to work under pressure in a fast paced, casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.
  • Work involves moderate exposure to hot and cold temperatures and/or loud noises.
  • Moderate physical activity is required along with the handling of objects up to fifty (50) pounds.
  • Work environment involves some exposure to physical risk, which requires following basic safety precautions.
Salary Starting Rate

$22.00
