Dozo by Tender Mercy in Dayton, OH, seeks an experienced full-time Sushi Chef.

Position:

Compensation:

Schedule requirements:

  • Approximately 40hr/wk
  • Tuesday – Saturday
  • 2:00pm to 10:00pm

Language requirements:

  • English

Experience required:

  • 2+ years of experience creating elevated sushi and processing high-end fish in an upscale casual or fine dining restaurant.
  • Knowledge of various sushi types and sushi-rolling techniques
  • Food safety knowledge (certification preferred)
  • Menu creation
  • Follow written recipes and instructions
  • P & L management (maintaining food costs, maximizing profitability)
  • Ordering & receiving, inventory
  • Purveyor management
  • Staff training and motivation
  • Knowledge of workplace safety procedures
  • Must be able to work in a standing position
  • Staff management of < 5 employees
