Job Description

The Steward is responsible for ensuring all dishes, pots, pans, cutlery, and chinaware are properly washed and sanitized. They also ensure that all dishes and utensils are stored correctly for use by various departments throughout the hotel.

Responsibilities

  1. Sort soiled ware promptly and carefully for proper processing through the dish or pot machine. Wash all ware quickly and return to designated storage areas. Keep the dish machine clean and filled with water according to hotel standards.
  2. De-tarnish and polish silverware for proper appearance.
  3. Clean kettles, tilt skillets, pots, and pans promptly and thoroughly to support kitchen operations.
  4. Transport and clean cooking utensils and service ware to provide appropriate equipment for cooks, banquet servers, and food servers.
  5. Maintain cleanliness of kitchen work areas, restaurant equipment, and utensils.
  6. Sweep and mop floors regularly.
  7. Wash worktables, walls, refrigerators, and meat blocks.
  8. Remove trash and garbage, placing it in designated containers.
  9. Steam-clean or hose out garbage cans.
  10. Scrape food from dirty dishes and wash by hand or load into racks or conveyor for dishwashing.
  11. Run glasses through the dish machine twice for thorough cleaning.
  12. Store and rotate stock properly.
  13. Put away all clean utensils and stock in designated areas.
  14. Clean and sanitize all kitchen equipment, stoves, grills, prep tables, etc.
  15. Ensure all kitchen areas, floors, and walls are sanitized.
  16. Report inventory needs to supervisor for supplies and chemicals.
  17. Follow safety guidelines and proper handling of all cleaning chemicals, including storage.
  18. Report any malfunctioning kitchen equipment to a supervisor or manager.
  19. Assist kitchen staff as needed.
  20. Support the Stewarding Supervisor in organizing and maintaining inventories of china, glassware, and silverware.
  21. Attend department meetings and required training sessions.
  22. Perform other duties as assigned by management.
