Responsibilities

  • Sort and rinse dirty dishes, glasses, and utensils and place them in racks for the dish machine.
  • Carry clean dishes to cook line and storage areas; rewash soiled items as needed.
  • Maintain a clean, safe, and sanitary dishwashing area and equipment.
  • Set up or break down the dishwashing area and report any equipment issues.
  • Work flexible hours, including evenings, weekends, and holidays.

Summary of Position


The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for China, glassware, tableware, cooking utensils, etc. Using machine and manual cleaning methods. This position also ensures the dishwashing area is maintained as a clean, safe and sanitary facility.

Along with complying with all laws, company policy, brand standards, the following are the Essential Functions of this position:

  • Complies with company, department & brand standards
  • Completes training as required by company, property and brand.
  • Maintains a clean and neat appearance at all times. A complete uniform (or business attire for non-uniformed associates) must be worn at all times in public areas, including a name tag.
  • Must be able to work flexible hours/schedule, including evenings, weekends, and holidays.
  • Sort and rinse dirty dishes, glasses, tableware and other cooking utensils and place them in racks to send through the dish machine.
  • Sort and stack clean dishes. Carry clean dishes to cook line and other proper storage areas. Rewash soiled dishes before delivering.
  • Change dishwater in dish machine every hour.
  • Wash pots, pans, and trays by hand.
  • Remove trash and garbage to a dumpster.
  • Set up or break down the dishwashing area.
  • Clean and roll/unroll mats.
  • Fill/empty soak tubs with cleaning/sanitizing solutions.
  • Sweep/mop floors.
  • Assemble/disassemble dish machine.
  • Sweep up trash around the exterior of the restaurant and garbage dumpster.
  • Conduct general restaurant and restroom cleaning as directed.
  • Wipe up any spills to ensure kitchen floors remain dry.
  • Notify manager anytime dish machine wash or rinse cycle falls below safety standard temperatures.
  • Do not touch dirty dishes before touching clean dishes without washing hands first.
  • Prepare food served using established production procedures and systems.
  • Set steam table; serve or ensure proper serving of food for tray line or dining room.
  • Comply with established sanitation standards, personal hygiene, and health standards.
  • Observe proper food preparation and handling techniques.
  • Store food properly and safely, marking the date and item.
  • Report necessary equipment repair and maintenance to supervisor.
  • Correctly prepare all food served following standard recipes and special diet orders.
  • Plan food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food are preserved.
  • Apportion food for serving.
  • Maintain daily production records.
  • Keep work area neat and clean at all times; cleans and maintains equipment used in food preparation.
  • Complete food temperature checks before service.
  • Any other duties that are required at the direction of the supervisor.
