Job summary

Great American Dining is seeking a dishwashing/utility worker to maintain cleanliness and sanitation of china, glassware, and utensils. Duties include operating the dish machine, hand washing, waste removal, and general kitchen upkeep in a busy restaurant environment.

Candidates should read chemical labels and preferably have experience in a commercial kitchen. Regular evening and weekend work is required, with a full-time schedule and physical duties such as lifting up to 25 pounds.

Qualifications

• Ability to read and comprehend labels on chemicals.
• Experience in commercial kitchen preferred.

Responsibilities

• Sort and rinse dirty dishes, glassware, and utensils and send through the dish machine.
• Stack clean dishes and transport to storage areas.
• Change dishwater in the machine hourly and maintain clean conditions.
• Wash pots, pans, and trays by hand when needed.
• Remove trash and garbage to dumpster.
• Set up or break down the dishwashing area.
• Clean and roll/unroll mats; manage soaking solutions.
• Sweep and mop floors; maintain dry surfaces.
• Disassemble/reassemble the dish machine as required.
• Maintain cleanliness around exterior of restaurant and dumpster.
• Inspect and ensure kitchen floors stay clean and safe.
• Notify supervisor if dish machine temps fall below safe standards.
• Follow safety protocols and do not touch dirty dishes without washing hands first.
• Assume other duties as directed.

Summary/Objective

The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, etc., using machine and manual cleaning methods. This position also ensures the dishwashing area is maintained as a clean, safe and sanitary facility.

Essential Functions

1. Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send through dish machine.
2. Sort and stack clean dishes. Carry clean dishes to cook’s line and other proper storage areas. Rewash soiled dishes before delivering.
3. Change dishwater in dish machine every hour.
4. Wash pots, pans and trays by hand.
5. Remove trash and garbage to dumpster.
6. Set up or break down dishwashing area.
7. Clean and roll/unroll mats.
8. Fill/empty soak tubs with cleaning/sanitizing solutions.
9. Sweep/mop floors.
10. Assemble/disassemble dish machine.
11. Sweep up trash around exterior of restaurant and garbage dumpster.
12. Conduct general restaurant and restroom cleaning as directed.
13. Wipe up any spills to ensure kitchen floors remain dry.
14. Notify manager any time dish machine wash or rinse cycle falls below safety standard temperatures.
15. Do not touch dirty dishes before touching clean dishes without washing hands first.
16. Other duties as directed.

Supervisory Responsibility

This position has no supervisory responsibilities.

Work Environment

This job operates in a kitchen environment. This role routinely uses sinks and dishwashers and tools to clean kitchen appliances. Employees in this role are frequently exposed to hot water, potentially slippery floors, garbage disposals and cleaning chemicals.

The employee is occasionally required to sit; climb or balance; and stoop or kneel. The employee must frequently lift and/or move objects up to 10 pounds and occasionally lift and/or move objects up to 25 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.

This is a full-time position. Days and hours of work vary based on need. Frequent evening and weekend work is required.
