Job summary

Driftwood Hospitality is seeking a Director of Food & Beverage for Canopy by Hilton West Palm Beach Downtown. You will own the full F&B program, including The Radical, in-room dining, and events, while leading a team to deliver locally inspired service and exceptional guest experiences.

You’ll oversee budgeting, forecasting, and revenue opportunities, and partner with the Executive Chef on menus and local sourcing. A hospitality or culinary degree and leadership experience are preferred.

Qualifications

• 3+ years of progressive leadership experience in hotel or restaurant F&B operations.
• Working knowledge of P&L management, cost control, and inventory systems.

Responsibilities

• Set the vision for a locally inspired, guest-focused F&B program that reflects Canopy’s vibrant, modern identity.
• Deliver service and quality standards that drive strong guest satisfaction scores and repeat business.
• Partner with the Executive Chef on menu development, seasonal features, and local sourcing.
• Own the F&B budget, forecasting, and P&L, and deliver revenue and profitability goals.
• Manage labor, food, and beverage costs through smart scheduling, inventory control, and purchasing.
• Identify new revenue opportunities, including events, promotions, partnerships, and local programming.
• Recruit, train, coach, and retain a high-performing team of managers and associates.
• Lead consistent pre-shift briefings and keep standards visible on the floor.
• Hold managers accountable for scheduling, timekeeping accuracy, and performance expectations.
• Create a positive, inclusive culture where team members feel recognized and supported.
• Ensure compliance with Hilton brand standards, food safety and sanitation, and liquor licensing and responsible service laws.
• Partner with Sales, Front Office, and Engineering to deliver seamless events and guest experiences.
• Respond to guest feedback quickly and turn it into lasting improvements.
• Build relationships with local farmers, vendors, artists, and neighborhood partners.
• Represent Canopy as a gathering place for locals and travelers alike.

Qualifications: Qualifications

Required

• 3+ years of progressive leadership experience in hotel or restaurant F&B operations
• Working knowledge of P&L management, cost control, and inventory systems
• Strong leadership, communication, and team-development skills
• Food safety and responsible alcohol service knowledge (certifications required or obtained upon hire)
• Flexibility to work evenings, weekends, and holidays as business needs require
• Ability to stand, walk, and lift up to 25 lbs. throughout a shift

Preferred

• Experience in a lifestyle, boutique, or select-service hotel
• Experience with a multi-outlet or beverage-forward concept
• Hospitality or culinary degree, or equivalent experience
• Familiarity with Hilton brand standards and hotel systems
