Dining Room Manager

Reports to: Director of Operations & Hospitality.

Role Purpose:
Echo Lake Country Club, a premier private country club, is seeking a dynamic and forward-thinking Dining Room Manager. The Dining Room Manager is responsible for managing the front-of-house team and service staff of our various dining outlets. The role involves maximizing sales and profits while maintaining exceptional member relations. A strong passion for dining room management, event execution, beverage operations, including wine, spirits, and beer, is essential. Success will be driven by fostering training and incentive programs.
Job Duties and Responsibilities:
  • Oversee the day-to-day operations of all food and beverage service outlets and staff training.
  • Work a flexible schedule, including all meal periods, closing shifts, opening shifts, early morning, late night, weekends, and holidays. Open availability is a must.
  • Lead and develop the Front of House team, including hiring, interviewing, and onboarding new hires.
  • Work in tandem with DOOH on beverage programming - including stock supplies, inventory control, and menu development.
  • Maintain a hands-on presence on the dining room and event floor with service staff and supervisors.
  • Order items needed for FOH staff (event and dining supplies).
  • Maintain dining room equipment and offer remedies to department head when problems arise.
  • Conduct training classes on member recognition initiatives, industry trends, wine/spirits/beer education, and hospitality touchpoints.
  • Review group function/ wedding/ event BEOs, the membership calendar, and reservation system daily to ensure proper staffing levels.
  • Establish and promote high standards of appearance, cleanliness, graciousness, and service.
  • Maintain high sanitation and safety standards.
  • Consistently conduct staff performance appraisals.
  • Manage bi-weekly inventories of outlets; wines, liquor, beer, CGS., and any other inventory assigned by management.
  • Oversee daily staff scheduling to reduce labor costs and efficiently execute events and dining room service standards.
  • Ensure dining room, common area and bar cleaning procedures are followed daily, weekly, and monthly.
  • Conduct meetings with Food & Beverage supervisors.
  • Perform weekly payroll for all front-of-house staff members as assigned.
  • Conduct weekly beverage orders to ensure proper par levels on all grounds.
  • Consistently coach and counsel all front-of-house staff members and perform disciplinary actions when necessary.
  • Perform all duties, demands and responsibilities as assigned, beyond this job description.

Required/ Preferred Qualifications:
  • Should posses a degree in Hospitality or comparable work experience.
  • Minimum three to five years' experience as Dining Room Manager.
  • Exceptional character, motivation, energy, and dedication to the profession.
  • Lifelong learning mindset with a focus on industry trends.
  • A history of stability and professional achievement.
  • Impeccable and verifiable references. Background check required.
  • Ability to read, write, speak, follow, and give written and/or oral directions in English. Other languages are a plus.
  • 5 years Food and Beverage experience in fine dining restaurant, private country club environment or resort is required.
  • Must feel comfortable managing multiple restaurant and bar outlets. Experience in Banquets and Bar management is a plus.
  • Excellent event management, interpersonal & relationship building skills, with a positive team-oriented attitude.
  • Proficient in excel, word, and office outlook calendar systems.
  • Proficient in member and guest relations, vendor relations, systems, employee relations, budgets, and costs.
  • Possess excellent basic math skills and have the ability to operate a POS system.
  • Excellent logistical planning and delegation skills.

Long-Term Objectives:
  • Develop and nurture strong relationships with club members to enhance their dining experiences.
  • Participate in regular training sessions to stay updated on industry standards and best practices.
  • Build a cohesive and efficient dining room and banquet team capable of delivering exceptional hospitality.

Qualifications and Skills:
  • Knowledge of floor and beverage, including a knowledge of food, wine, and spirits.
  • The ability to manage in a diverse environment with focus on member and guest service.
  • The ability to perform new-hire orientations, answer and all inquiries about the Echo Lake Country Club.
  • Ability to multi-task and prioritize competing requests.

Working Conditions:
  • Regular work requires a great deal of sitting, standing, lifting, bending and stretching.
  • Must be able to stand for a minimum of 10 hours at a given time.
  • Ability to lift and carry up to 35 lbs.
