Position summary
The Dietary Manager is a key leadership position and is directly responsible for the successful operation of Dining Services. The Dietary Manager is responsible for actively preparing meals and managing the operations of the Dining Services Department, including staffing, food ordering and accountability, preparation, menu planning, food delivery and sanitation in accordance with appropriate health department regulations. The Director ensures client and customer service/satisfaction with efficient cost-effective management that both meets and exceeds stated expectations. Assist in maintaining a positive physical and social environment for residents.
Essential duties and responsibilities
- Supervise, assign duties and tasks while directing the work of all food service department employees with full accountability of the dining services department.
- Ensure equipment is maintained and work areas are clean, safe, and orderly. Adhere to procedures regarding infection control, food-borne illness prevention, harmful chemical handling, fire safety, and sanitation; promptly address any noncompliance. Maintain food costs within budgetary constraints. Maintain strict inventory control.
- Demonstrate independent judgment and discretion.
- Interview, make hiring recommendations, and orient new staff.
- Schedule and reschedule staff using independent judgment and discretion when creating the schedule and making determinations regarding time-off requests or other modifications in work schedules.
- Responsible for tracking attendance and effectively carrying out disciplinary action where appropriate.
- Communicate and enforce policies and procedures including the employer's safety, sanitation, and human resources policies; directly discipline and effectively recommend corrective action to enforce such policies.
- Evaluate performance and recommend changes to terms and conditions of employment based on evaluations.
- Complete dietary QA audits on a quarterly basis.
- Plan community and individual resident menus as ordered by the primary care provider in coordination with Affinity staff and medical staff if necessary. Plan special events as needed.
- Ensure meals are prepared according to menu and recipes; food is prepared in a nutritional, appetizing fashion and presented attractively. Ensure snacks are available for residents with special dietary needs. Ensure all utensils, dishes, and equipment and work areas are cleaned properly and in a timely manner. Supervise and ensure that food is stored safely, defrosted, and prepared in keeping with safe and sanitary procedures.
- Ensure that all employees provide excellent customer service to internal and external customers.
- Perform job duties for residents and with team members in a courteous and professional manner.
- Take initiative to ensure resident safety and satisfaction is a priority.
- Meet and greet visitors in a friendly, helpful manner (visitors include residents’ families and friends, prospective residents and their families, referral sources, vendors, and regulators).
- Answer phones appropriately, according to company and community standards.
- Ensure compliance and understanding of all regulations regarding residents' rights.
- Ensure employees attend required in-service trainings and provide in-service trainings as needed.
- Attend training sessions as directed by supervisor.
