The Dietary Manager is responsible for the daily operation of the department that prepares and serves food and beverages for patients, staff, and guests. This role involves directing, coordinating, and controlling the nutritional services of the facility in accordance with established policies, procedures, and compliance with laws and regulatory standards. The manager provides operational direction and information to determine policies and practices related to nutritional care for persons receiving services.

Roles and Responsibilities:

  1. Determine the amount and type of food and supplies required for daily menus, snacks, and special needs meals.
  2. Develop menus and diets, ensuring they are suitable and nutritionally adequate for patients.
  3. Identify and report any issues with care plan or special diet orders to the dietitian.
  4. Lead a team through hiring, orientation, performance assessment, motivation, training, scheduling, and coaching to meet department goals.
  5. Implement cost-effective administrative procedures for dietary services and analyze work processes to improve efficiency.
  6. Maintain a clean and safe kitchen environment, ensuring safety precautions are followed.
  7. Determine and monitor budget requirements, approve expenditures, and ensure resource utilization.
  8. Select vendors, coordinate agreements, and manage procurement of equipment, food, and supplies.
  9. Address potential food and drug interactions to prevent negative outcomes.
  10. Supervise the use of standardized recipes for food preparation.
  11. Assist dietitian with establishing or revising dietary policies and menus.
  12. Plan and assist in the preparation of special meals for events.
  13. Oversee departmental cleaning, supplementing housekeeping as needed.

Qualifications:

  • High school diploma or equivalent required.
  • Bachelor's degree in Food Service Management, Human Nutrition, or related field preferred.
  • At least 5 years of experience in a food service role, preferably in institutional settings such as schools or hospitals.
  • ServSafe Certification required.
