Job summary

Harvest Table Culinary Group at Salem College is seeking a Culinary Enablement Analyst to support the culinary development team, manage the master recipe database, and help ensure accurate nutrition, yield and costs for campus dining.

The role collaborates with culinary, guest experiences, leadership, clients, and campus organizations to improve guest experiences and maintain high standards for culinary systems and tools.

Qualifications

• Minimum 2 years experience in a similar work environment or as a culinarian in a different setting and/or relevant experience.

Responsibilities

• Oversee the master culinary database and ensure recipes are sound for culinary prep, yield and nutrition.
• Edit recipes for development team, confirming serving sizes match ingredient amounts and kitchen math accuracy.
• Ensure cooking and holding times are properly documented and all recipe testings are fully recorded.
• Modernize recipes by updating ingredients and procedures on recipe cards; maintain standards across recipe collections and systems.
• Verify accuracy of food cost percentages and provide allergy and dietary information for all recipes and menu items.
