Job summary

This role involves coordinating production schedules and maintaining security of kitchen areas within a correctional setting. Responsibilities include reviewing production logs, ensuring accurate portions, and following HACCP procedures while maintaining safety compliance and inventory controls.

Qualifications

• Minimum one year in food prep or related work preferred.
• Previous supervisory experience preferred.
• Experience interacting with inmates a plus.
• Must obtain a food safety certification.
• Ability to work independently with limited supervision.

Responsibilities

• Adhere to production guidelines and review logs.
• Supervise inmates in food preparation and tray assembly.
• Ensure timely, efficient meal service and compliance.
• Train workers and coordinate assignments.
• Print and distribute recipes; ensure proper portions.
• Direct inmates in use of recipes and proper cooking procedures.
• Maintain sanitation and safety per HACCP policies.
• Ensure secure storage and controlled access to tools.
• Obtain daily population counts and review with staff.
• Assist in inventory and requisition orders as needed.
• Follow safety procedures and security clearance requirements.
