Job Responsibilities:
  1. Assign, supervise, and train employees and helpers from the resident population; evaluate performance and recommend actions.
  2. Prepare, cook, and dispense food; serve as lead cook; manage food distribution to dining rooms.
  3. Supervise maintenance of culinary utensils and equipment; ensure cleanliness of storage and work areas.
  4. Inspect and maintain food handling practices, safety, and sanitation standards.
  5. Requisition, receive, inspect, store, and inventory supplies; supervise garbage disposal.
  6. Plan menus in accordance with established food allowances; ensure compliance with CDCR menus and recipes; determine food quantities.
  7. Act for Supervising Cook II or Food Administrator I in their absence.
  8. Keep records, prepare reports, maintain order, and supervise conduct of persons in custody.
  9. Maintain security, inspect premises, and search for contraband.
Minimum Qualifications:

Either I: One year of experience as a Cook Specialist II (Correctional Facility) or in a similar role in California state service.

Or II: Two years of supervisory experience over food service staff, with responsibilities including food preparation, cooking, and serving; plus, education equivalent to high school diploma.

Individuals eligible for Training and Development assignments may also be considered.

Working Conditions:

Work in correctional facility environment, with responsibilities including food service, supervision, security, and inspections.
