Job description

Job Title: Correctional Cook

The Riverside County Probation Department is accepting applications for the position of Correctional Cook at the Youth Treatment and Education Center in Riverside. This role involves preparing, cooking, and serving food at the County detention facility, supervising food service workers in routine activities, and ensuring proper kitchen operations.

Key Responsibilities:

  • Prepare, cook, and season a variety of foods including soups, meats, fish, poultry, vegetables, and desserts.
  • Assist in ordering, receiving, and storing food supplies.
  • Supervise food service workers, oversee kitchen cleanliness, enforce discipline, and train staff in kitchen equipment use.
  • Perform meat cutting and baking duties as required.
  • Maintain records and reports; work various shifts as needed.
  • Prepare incident reports if necessary.

Qualifications:

  • Option I: One year of large quantity cooking experience in a setting such as institutional, military, or large commercial kitchens, involving preparing meals for 100+ people from scratch.
  • Option II: One year of food service experience within a detention facility.
  • Option III: Two years of experience in similar large-scale food service settings.

Knowledge and Skills: Knowledge of large-quantity food preparation, safety and sanitation, inventory management, and kitchen equipment. Ability to coordinate cooking processes, read recipes, perform basic math for ingredient measurement, and follow instructions.

Schedule: Rotating shifts, including some weekends and holidays.

Certifications: Must possess a ServSafe Certification or Riverside County Food Handlers card at hire.

Additional Information: The position offers a $10,000 hiring/retention bonus spread over five years, with specific payout milestones.
