Title: Corporate Director of Food and Beverage – Full Service/Lifestyle Brands
Location: Corporate Office or Field Based
Reports to: VP of Operations Support
Job Summary:
Creative, energetic, passionate & engaging F&B professional willing to roll your sleeves up and be responsible for the day-to-day support of property level Food and Beverage Directors and Managers for full-service and lifestyle brand hotels, to include but not limited to: personnel, budget performance, financial controls, preparation, service and set-up of menu items, promotions, training and ensuring hotels’ certifications required by multiple brands for multiple hotels.
Pre-Requisites:
- Two years experience supervising (at least) 20 associates.
- Two years’ experience in multi-outlet facilities.
- One year experience following standard recipes.
- Experience ordering/pricing food and beverage control.
Essential Functions
- Must be able to perform major life activities: Standing, lifting, bending, learning, reading, concentrating, thinking, and communicating.
- For this position specifically:
- Must be able to push or pull 60 pounds and lift and/or carry 30 pounds.
- Must be able to stand for eight hours, bend, stretch, reach.
- Must be able to speak and read English; the ability to communicate in another language may be helpful.
- Must display professionalism, honesty, and trustworthiness at all times.
- Must be able to travel and stay at various locations overnight.
Required Knowledge, Skills, and Abilities
Knowledge:
- Financial aspects of running a department: labor, food and beverage costs, controls.
- Storage and labeling of all products: dry, freezer, refrigerated, etc.
- OSHA requirements and maintains department accordingly.
- Safety training, food certifications training, Health Department scores, and requirements.
- Supervisory skills: interview, hire, train, appraise, document, motivate.
- Sales and Marketing.
Skills:
- Train and develop Property Level F&B Directors and Managers through meetings, logs, etc.
- Monitor and document Property Level F&B Directors and Managers for both positive and negative feedback.
- Computer literate to thoroughly operate property management system.
- Ensure Property Level F&B Directors and Managers maintain organization of supplies, storage rooms, refrigerators, and freezers.
Abilities:
- Multitask, work independently on improvement, remain associate and guest service centric.
- Effectively communicate with guests, General Managers, department heads, associates, and corporate support staff.
- Market and promote to increase exposure and sales of both food and beverage.
Specific Responsibilities:
- Drive innovation in F&B, develop executable plans and ensure speed to market with new ideas. Help develop communication plan to share ideas, concerns and execution ideas.
- Maintain knowledge on current brand initiatives in all related industry, competitor, and economic trends.
- Work with hotel teams to plan menus which focus on creativity that aligns with the brand, owner and LBA goals for the outlet.
- Generate ideas to help “activate” the outlets including hotels with rooftop bars, tiki bars, etc. to increase guest engagement and interest.
- Offer Food & Beverage expertise to help drive hotel sales. This includes guidance in developing marketing initiatives, cost management solutions and other initiatives to optimize food and beverage revenue.
- Ensure Hotels maintain safety and security practices, have thorough knowledge of emergency procedures. Ensure Hotels maintain all Food Safety, Department of Health, and OSHA standards.
- Ensure guests are provided with the highest quality product and service by evaluating GSS of each hotel and provide support in areas that may need improvement to positively impact profitability.
- Support hotel openings with talent selection, brand knowledge, training, and taskforce needs. Coordinate execution of training to associates in areas related to employee discipline, liquor service, cash handling, and food safety.
- Assist and support hotel leadership in recruiting efforts to attract, develop and retain top talent for the F&B departments.
- Provide support to all food and beverage related disciplines and support F&B initiatives that align both with brand and LBA goals and standards.
- Must be able to analyze, troubleshoot, and constructively suggest areas for improvement of a hotels’ food and beverage operation. Troubleshoot and respond effectively to issues related to POS, Avendra, and other vendor concerns.
- Maintain close and productive working relationships with all levels of stakeholders, corporate and field-based teams, and vendors. Respond to and resolve operational requests from key stakeholders.
- Assist in the preparation of annual budgets based on the Hotel’s surrounding influences.
- Regularly check individual hotel Food and Beverage financials and operational reports – P&L, budget control, food and labor costs, etc. Monitor all appropriate metrics to identify and effectively manage business risks.
- Ensure hotel F&B Directors and Managers are utilizing best practices and approved vendors for items used in the Food & Beverage Operation.
- Ensure hotel F&B Directors and Managers work within budgeted guidelines for maximum revenues and within labor models.
- Must be thoroughly familiar with the Associate Handbook, implement all the rules, policies and procedures established by the company; including, but not limited to, those contained in the Associate Handbook.
- Maintain certification from a brand approved responsible vendor training program and ensure the portfolio’s hotels do the same.
Working Conditions/Special Requirements
Standing and walking for long periods of time while maintaining an aggressively friendly professional image. Be flexible regarding work schedule. Be available as necessary 24/7, weekends and holidays.
Positions for possible advancement:
Before the next promotion, this person should develop and train her/his replacement. The ability to teach skills and competencies will enhance leadership skills in preparation for further promotion.
