What You Will Do In This Role

  • Reviews production sheets and/or menus to determine types and quantities of foods to be prepared.
  • Follows simple recipe and other production information to complete preparation of assigned menu items.
  • Arranges/presents foods in an attractive and appetizing manner.
  • Observes and tests food being cooked by tasting, smelling, and piercing with a thermometer to determine that it is cooked according to standard recipe and in compliance with health standards.
  • Prepares menu items such as vegetables, fish, meat, casseroles, soups, and stews using established food production systems and utilizing equipment such as kettles, ovens, deep fryers, pressure steamers, etc.
  • Follow instructions from Chef or supervisor for batch cooling of daily menu items to facilitate uninterrupted efficient operation of tray line, Dining Room, and other service areas.
  • Participates in monitoring of food quality, to include temperature, and accuracy.
  • Completes setup and placement of food items on resident tray line and other food service areas.
  • Confirms menus and amounts using established production forms
  • Other duties as assigned by the Executive Chef.

Qualifications

Qualifications:

  • Required: Two years experience as a cook or in food preparation. Short order cooking experience and breakfast cooking experience is ideal.
  • Required: A working knowledge of the various equipment in the kitchen, i.e. slicer, slow cooker, knife handling, etc. Training will be provided to familiarize incumbent with related equipment to ensure safety during use.
  • Preferred: High school diploma or equivalent. Possess a two-year degree in culinary arts, hotel/restaurant management, or a food service-related field of study.

In 1970, the first of our two campuses opened in San Antonio. Air Force Village I was followed in 1987 by Air Force Village II. For decades, our campuses created a community for officers of the armed forces - a retirement lifestyle rich with camaraderie and the shared common bond. We began by providing support to the widows of those who have served, and that legacy continues. In 2014, we expanded our eligibility to embrace a wider range of retired seniors, including those from civilian careers. With this change, a new name - Blue Skies of Texas - was added, and the campuses were renamed Blue Skies East and Blue Skies West. Continuing to offer modern residences and a range of senior-focused services and amenities, the Air Force Village legacy we cherish carries forward in Blue Skies of Texas.
