Main Duties
  • Prepare food according to recipe specifications and ensure the success of daily culinary operations for the dining room.
  • Use only the highest quality ingredients and maintain standards during busy periods.
  • Carry out opening duties: set up workstations with mis‑en‑place, inspect cleanliness, check production schedule and pars, and communicate supplies needs to the Chef.
  • Assist in prep work, start production of daily items, and manage shortages with Sous‑Chef.
  • Minimize waste, maintain food‑cost forecasts, and keep all equipment and tools in proper working condition.
  • Sanitize cutting boards, tables, and all work surfaces; transport dirty pots and pans to the pot‑wash station.
  • Direct and assist stewards for efficient cleanup; break down workstations and complete closing duties, including returning food to storage, rotating product, labeling, and cleaning prep areas.
  • Assist with inventories, plating of banquet meals, and restock items depleted during the shift.
  • Report any maintenance problems, safety hazards, accidents, or injuries, and complete required safety training and certifications.
  • Perform other kitchen duties as assigned and attend designated meetings.
General Duties
  • Stand or walk for extended periods and lift up to 50lbs.
  • Strictly abide by state sanitation, health regulations, and hotel requirements.
  • Maintain knowledge of equipment usage, departmental policies, and procedures.
  • Be presentable, maintain a professional appearance, and uphold uniform standards.
  • Document any shortages or supply needs and inform the Chef promptly.
  • Complete training/certification processes and follow maintenance programs and cleaning schedules.

Employment Conditions
