Job summary

Trinity Services Group is seeking a Lead Cook to efficiently prepare a variety of items and help run the shift with quality and safety in mind.

The role includes supervising inmates on assigned tasks, following recipes, and ensuring timely service. The position requires a high school diploma or GED, 1+ year cooking experience, and offers training and benefits with growth potential.

Qualifications

  • High School Diploma or GED and/or equivalent experience. Must be at least 21.
  • At least one year of relevant cooking experience.
  • Experience in a cafeteria or large-volume production preferred.
  • Knowledge of safety procedures in a cafeteria environment.

Responsibilities

  • Function as a Lead for their respective shift, ensuring an efficient, well-running shift and that other positions complete tasks.
  • Prepares meats, seafood, poultry, vegetables and other items for cooking on broilers, ovens, grills, fryers and other equipment.
  • Refer to Daily Prep List at shift start and complete opening/closing checklists daily.
  • Reports equipment and product quality or shortage problems to supervisor.
  • Maintains standard portion sizes, cooking methods, quality standards and kitchen rules.
  • Stock and maintain food levels at line stations to assure smooth serving of food.
  • Portions food according to standard sizes and recipe specifications.
  • Completes production paperwork and supervises inmates' tasks when applicable.

About This Position

Must have open availability to work 1st or 2nd shift between the hours of: 5:00AM - 7:30PM

Accurately and efficiently prepares a variety of food items in accordance with assigned work instructions and menus.

Responsibilities (Essential Functions, Duties, and Responsibilities)
  • Function as a Lead for their respective shift, being responsible for an efficient, well-running shift, while ensuring other positions (Cook I / FSW) are completing required tasks
  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment
  • Refer to Daily Prep List at the start of each shift for assigned duties and completes opening and closing checklists daily
  • Promptly reports equipment and food quality or shortage problems to Assistant Food Service Director/Food Service Manager
  • Knows and complies consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, recipes, policies and procedures
  • Follows assigned instruction to properly stock and maintain sufficient levels of food products at line stations to assure smooth serving of food
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications
  • Responsible for completing required production paperwork, while also assigning and supervising inmates in (as provided) in the completion of their required tasks. These could include food prep, serving, clean-up, pots, dishes, sanitation etc. (when applicable)
  • Responsible for all aspects of receiving, storing, issuing and controlling inventory (when applicable)
  • Maintains a clean and sanitary work station area
  • Following assigned recipes, prepares food items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating according to directions
  • Follows proper plate presentation and garnish set up for all dishes
  • Handles, stores, labels, and rotates all products properly and in accordance to applicable state laws
  • May perform other duties as assigned
What You'll Need
  • High School Diploma or GED and/or equivalent experience. Must be at least 21 years of age.
  • At least one (1) year of relevant cooking experience required.
  • Prior experience cooking in a cafeteria or large volume production facility a plus.
  • Prior knowledge and experience in a kitchen or large cafeteria setting preferred.
  • Experience with safety procedures as typical in a cafeteria or food service environment.
