Job summary

UT Southwestern Medical Center in Dallas seeks a cook for high-volume production. You will prepare salads, sandwiches and cook menu items, following production guides and safety standards.

You will interact with patients, visitors and coworkers while maintaining HACCP records and sanitation protocols. The role requires 2 years of cooking experience, with a preference for high-volume environments; the preferred candidate will have a high school diploma or equivalent and demonstrate teamwork and

  • Completes and maintains all job performance requirements and standards as established by department specific procedures.
  • Consistently follows production guides, and assembles food, supplies and equipment for daily preparation of salads, sandwiches and cook menu items.
  • Interacts positively and courteously with all customers (patients, visitors, vendors and co-workers in other departments).
  • Maintains HACCP records including HACCP/Production Records, Thermometer Logs, Cooling Logs, Refrigerator and Freezer Logs.
  • Able to work any position within the food production arena; follows sanitation procedures and cleans work area and equipment.

EXPERIENCE AND EDUCATION
Required
  • 2 years Cooking experience required, preferably in a high-volume environment.
Preferred
  • High School Diploma Or equivalent
JOB DUTIES
  • Completes and maintains all job performance requirements and standards as established by department specific procedures.
  • Consistently follows production guides, menu and assemble food, supplies and equipment for daily preparation of salads, sandwiches and cook menu items.
  • Supports teamwork and cooperation with co-workers in daily activities; presents constructive feedback regarding system failures and participates in resolution.
  • Interacts positively and courteously with all customers (patients, visitors, vendors and co-workers in other departments) through direct interaction, telephone conversations or written materials.
  • Completes and keeps track of all record keeping associated with HACCP including HACCP/Production Records, Roast Meat Charts, Thermometer Logs, Cooling Logs, Refrigerator and Freezer Logs.
  • Able to demonstrate ability to work any position within the food production arena.
  • Follows procedures for sanitation of work area and equipment during food production. Cleans and sanitizes work area and equipment at end of shift.
  • Maintain a minimum score of 90 on Health Inspections.
  • Maintain established department goal for Press Ganey of 95.
  • Assists in completing weekly inventory on all foods, paper products, chemicals and all other associated items in accordance with all menus, recipes, caterings, events and projects as required.
  • Work with Cook's Assistant and Cook's in training and skill development. Participates in in-services directly related to production. Lead by example in food safety, physical safety, and culinary standards.
