Job summary

Job description

Responsibilities
  • Cooking all menu items for Lunch, dinner, and banquet meal functions.
  • Maintain detailed knowledge of all menus, recipes, food quality standards and regulations.
  • Prep for assigned meal periods; present and portion food correctly.
  • Ensure food leaves kitchen simultaneously, in a timely fashion, high quality, and prepared per order.
  • Prepare foods such as salads, soups, sauces, meats, and vegetables per prescribed recipes.
  • Bake, roast, broil, steam meats, fish, vegetables and other foods.
  • Add seasoning during cooking and adjust as needed.
  • Read menu to estimate food requirements and requisition from storage.
  • Observe and test cooked foods using thermometer; ensure proper temperature.
  • Carve meats, portion onto plates, add gravies, sauces, garnish servings.
  • Follow food handling, sanitation, and health department guidelines.
  • Ensure compliance with federal, state, local, and company health, safety, and sanitation standards.
  • Wear non‑slip, oil‑resistant shoes; follow safety policies and procedures.
  • Act on potential safety issues, resolve emergencies.
  • Use PPE when required; report defective or damaged PPE.
  • Maintain compliance with hotel HAZMAT program; familiarize with current MSDS.
Qualifications
  • Knife skills knowledge preferred.
  • Active state ServeSafe food handler card.
  • Positive contribution to team and company culture.
  • 1‑2 years prior restaurant food prep experience (great if).
  • Culinary degree or training desired.
  • Prior line cook experience.
  • In‑depth knowledge of restaurant food preparation, professional cooking, knife handling skills.
  • Ability to serve needs of guests and team through verbal interactions.
  • Positive attitude and professional demeanor.
  • Strong communication and interpersonal skills.
  • Commitment to high level of guest satisfaction.
  • Ability to read and interpret recipes and safety rules.
  • Must speak, read, write, understand English.
  • Valid current Food Handlers Card or willingness to obtain within 30 days.
Physical & Safety Requirements

While performing job duties, the employee will stand and walk for sustained periods, work at a quick pace, handle hot items, reach, stoop, kneel, crouch, push and pull carts, lift up to 50 lbs occasionally, and move amongst crowded narrow aisles. Employee must tolerate hot and cold temperatures, loud noise, chemical exposures, and environmental hazards such as slick floors, hot plates and glassware, fumes, odors, dust, and vibrations.
