The Dim Sum Cook is responsible for the entirety of daily operations of the back of the house functions in the restaurant. This position will oversee all activity in the Dim Sum Prep and the Roast Kitchen, train personnel, plan menu, oversee product purchasing, and manage culinary budget. The Dim Sum Chef serves as a role model and mentor to the chefs and line cooks, and must maintain a professional appearance, language skills and demeanor. The Dim Sum Cook is an ambassador for the organization as they promote the employer brand. Primary Job Duties: - Includes but is not limited to:

  • Ensures excellence in guest satisfaction through a commitment to exceeding expectations and a hands-on, lead-by-example management style.
  • Management of all back-of-house staff in a large-volume, production kitchen, including ongoing training, development, and follow-up.
  • Achieve or exceed budgeted labor and other cost centers through proper planning and execution.
  • Oversee weekly and monthly inventories and ordering of food and supplies, ensuring accurate stock levels and cost control.
  • Maintain sanitation procedures and organization of work area adhering to all OSHA regulations and health department standards, including conducting inspections with Health Inspectors.
  • Menu development, standardizing recipes, and ensuring food presentation quality at all times, while identifying new culinary techniques and sourcing innovative ingredients.
  • Staff management, including interviewing, hiring, training, scheduling, payroll, performance evaluation, discipline, and termination of employees.
  • Proficient use of applicable systems such as Outlook, Purchasing Systems, Kronos, and HotSOS for accurate reporting and operational efficiency.
  • Maintaining overall food & labor cost within budgetary guidelines while achieving assigned department budget goals.
  • Enforcing strict health and hygiene standards while ensuring all required certifications are up to date and compliant with regulatory requirements.
  • Use personal device/cellular phone for job related operational tasks, job duties, review of company documents, etc.
  • Perform other job-related duties as requested.

Qualifications: - Includes but is not limited to:

  • Must be able to prepare and create various Dim Sum, bao buns, and Chinese BBQ meats, including roast duck, roast pig, and char siu.
  • Requires advanced knowledge of the principles and practices within a large volume, production kitchen setting, including experience in managing people, complex problems, and food preparation.
  • Employs good safety and sanitation practices to ensure a clean and compliant work environment.
  • Food Safety/Manager Certification required.
  • Must be able to work under pressure, in a controlled, chaotic environment while maintaining efficiency and quality.
  • Must be able to service VIP casino guests and prepare custom menus on short-term notice.
  • Excellent time management skills to handle multiple tasks and meet deadlines in a fast-paced environment.
  • Ability to effectively communicate in English (written and verbal), including reading safety rules, operating procedures, and preparing reports.
  • Has strong attention to detail to maintain high food quality and presentation standards.
  • Must be able to work well in a team environment, communicate effectively, and provide feedback to achieve mutual goals.

Preferred

  • Culinary Arts degree
  • Experience in a similar position within a hospitality establishment
  • Fluency in both Mandarin and Cantonese
  • Experience in a large, luxury resort setting

Minimum Education And Experience

  • At least 21 years of age.
  • High School Diploma or equivalent.
  • Minimum of 5 years of experience as a Dim Sum and Chinese BBQ Chef

Certificates, Licenses, Regulations

  • Proof of eligibility to work in the United States.
  • Ability to obtain required licenses:
    • Food Handler's Card
