Job Duties:

  1. Produce consistent food products while following recipes with reduced supervision and direction from the chefs, while maintaining quality standards.
  2. Exhibit an advanced knowledge, understanding, and application of knife skills and cooking techniques.
  3. Identify and safely use all kitchen equipment.
  4. Properly label, date, and rotate all products to ensure safekeeping and sanitation.
  5. Maintain an organized, clean, and sanitary station/work area in accordance with Health Department/ServSafe standards.
  6. Assist, train, and direct culinary interns, general cooks, and Cook IVs in daily tasks.
  7. Able to work all stations in designated shifts including but not limited to Garde Manger, A la Carte HotLine, Banquets, etc.
  8. Perform other job-related duties as required, including nightly food requisitions from the butcher/storeroom and prep lists.

Qualifications:

  1. Must be 18 years of age or older.
  2. Minimum of 4 years culinary experience OR a degree or certificate from a Culinary Institution plus 2 years culinary experience.
  3. Complete a mystery basket cooking test to include 4 courses in 4 hours.
  4. Complete a 25 question written cooking exam, covering modern fundamentals and classic cooking techniques with a score of 80%.
  5. Post-employment: Must obtain ServSafe Handler certification.

Knowledge, Skills, and Abilities:

  1. Proficient with a minimum of two cuisines, including but not limited to Asian, Italian, Classical, New American, and Mexican.
  2. Basic understanding and knowledge of inventory control, requisitions, and par levels.
  3. Knowledgeable of kitchen equipment, good knife skills, and possess a full tool kit.
  4. Knowledgeable of weights and measures, as well as basic math applications.
  5. Strong communication skills, both written and verbal.
  6. Possess a positive attitude with a professional appearance and demeanor.

  8. Must have the ability of taste buds to distinguish between and among flavors, spices, temperature, and mouth feel of food and beverage.
  9. Must have the ability of olfactory nerves to distinguish between and among odors and scents.
  10. Must be able to work in extreme temperatures.

This is a union position and the work schedule will be based on union seniority. Candidates must be able to meet scheduled requirements, which will most likely require evening and weekend hours.
